Chicken Caesar Salad
The word ‘salad’ can be off-putting when thinking about family meals and kids! I can bet your child does actually eat something resembling salad though; whether that be cucumber or carrots at least. The great thing about serving meals ‘family-style’ is you can serve all components to this dish in the middle and everyone can take what they wish and you build from there over the years.

INGREDIENTS:
- Mini chicken fillets – they cook quickly and are more tender I find. If using regular sized chicken breasts, bash them out until thinner all over (about 2 cms). I’ll be frying mine and following this method.
- Parmesan shavings or another cheese if you prefer (I use a veggie peeler)
- Romaine or cos lettuce (or whatever you have)
- French fries
- Croutons – slice bread in thicker chunks and dice up and fry in a mix of oil and butter until crispy and golden. Use sliced bread for thinner chunks if that’s all you have
- Shop bought caesar dressing
Serving suggestion:
- A large dollop of long-term thinking (don’t focus on just one meal)
- A cup of cheerful conversation (no bribery, just connection)
- A pinch of salt (how you should take all food rejection!)
- Lashings of laissez-faire (the less you micro manage, the better)
